Never go Wrong Butter Cake

I am going to reveal a secret of making nice and spongy butter cake with minimum effort. I was referring so many on-line cookery blogs and youtube channels. Sometimes I experienced something wrong to have a nice and fluffy butter cake. However, the method that I am going to reveal now is the best method I ever tried and I will be using this for the rest of my baking for sure.

This method becomes unique with the double boiling system. Believe me, you do not require to use any electric mixture for this method. It doesn't mean that you need to mix it hard. This is very simple you need these ingredients for cake mixture.

Ingredients

Plain flour 200g (2cups)
Sugar 200g (1cup)
Butter 200g (1cup)
Eggs 4
Baking powder (1 teaspoon)
Milk 60ml (1/4cup)
vanilla essence 1 (teaspoon)

Step one: Grind the sugar into powder and sift the plain flour with baking powder twice and keep it separate.

Step two: Blend Eggs well (Actually I used mini grinder for this as well to save my time)

From this point onward  I used only the cake hand mixer. 



Step three: Get a bowl and add butter and powder sugar. In this step, you will be double boiling the butter and sugar. It is important to get warm water, you should be able to keep your hands in that. Then it is the right temperature. Mix well during the double boiling. Once it became a nice and smooth paste, remove from double boiling and mix evenly.

Step four: Gradually add egg and mix well. Do not let the mixture goes cuddles. That is why you should add egg slowly into the butter-sugar mixture.

Step five: Gradually add milk and vanilla into the mixture and keep mixing. If you notice that the mixture is getting cuddles, add 1 tablespoon of sifted flour and keeping mixing nicely. Make sure that you do not over mix it.

Step six: Step by step add flour into the mixture and fold the mixture to get evenly distributed cake mixture without any lumps.

Step seven: Preheat the oven for 160'C for 5-10 minutes

Step eight: Grease a pan and pour the cake mixture into it and bake for 35-40minutes.
