Achari means pickle
This recipe is easy, full of flavor with spices and pickle. It is extremely aromatic and delicious, and as is the case with most pickled foods, the flavor improves over time.
The importance of this recipe is to make the masala properly.
Ingredients for masala (900kg of chicken):
Whole red chili 3pcsCurry leaves 4
Coriander seeds ½ tsp
Fenugreek seed 6pcs (Do not over add it)
Fennel seed ½ tsp
Mustard seeds 1tsp
Pan fry these together (do not burn) and grind it to smooth powder
Preparation:-
Oil 1tbspLarge onion 1
Green chili+ Ginger+ Garlic paste
Tomatoes puree 1 cup (Make it at home, Don't buy)
Pepper 1tsp
chili powder 2tsp
Sugar 1tsp/2tsp
Salt
Lemon /Vinegar 1tbsp (Optional)
Oil fry the onions and Green chili, ginger, garlic paste in low flame. Add pepper and chili powder. Bring onions to soft paste and add tomato puree. When the paste starts separating from oil add the masala powder, mix it evenly. Then add chicken. Salt to taste. Close the lid for about 10 min in medium flame. If water requires adding accordingly to cook chicken properly. Add sugar and Lemon/ Vinegar to your taste.
